SWISS  STEAK

 

 

 

2 Tablespoons Flour

 

¼  Teaspoon Salt

 

1/ 8 Teaspoon Pepper

 

1 Pound Beef Boneless Bottom or Top Round,  or Chuck Steak

 

1 Tablespoon Shortening

 

1 Can (8 oz.) Whole Tomatoes

 

1 Medium  Onions,  Chopped

 

½  Small Green Pepper, Finely Chopped

 

½ Teaspoon Salt

 

1/8  Teaspoon Pepper

 

 

Mix  flour, ¼  t. salt and 1/8  t.  pepper.  Sprinkle one side beef with half mixture

 

and pound in.  Turn beef over pound in remaining flour.  Cut into 4 or 5 pieces.

 

Heat shortening until melted Cook beef over medium heat until browned about 15

 

minutes.  Mix tomatoes with liquid and remaining ingredients.  Pour over beef.

 

Heat to boiling and reduce heat.  Cover, simmer until beef is tender, about 45

 

Minutes.       Enjoy!
