MITCH’S  GREAT  CHILI

 

 

 

1 Teaspoon Olive Oil

 

½  Lb. Chopped Tasso or Deer Sausage

 

1 ½ Lbs. Ground Chuck

 

2 Dried Chilis

 

½ Onion , Chopped

 

4 – 5 cloves Garlic , Minced

 

4 Tablespoons Brown Sugar

 

2 Bay Leaves

 

½  Cup Chili Powder

 

1 14 ounce Can Diced Tomatoes

 

2 Cups Beef Broth

 

1 Cup Red Wine

 

1 Lb. Dry Chili or Pinto Beans

 

2 Tablespoons Red Pepper

 

 

 

Soak beans overnight.  Drain.  Saute beef, tasso, and sausage and when brown

Add onions and garlic and cook until wilted.  Add remaining ingredients

Except beans.  Simmer for 1 – 1 ½ hours.  Put soaked beans in 8 quarts of

Fresh water and bring to a boil. Reduce heat, cover and simmer for 1- 1 ½ hours.  Drain and add to chili mixture.  Simmer for 20 minutes.
