¾ Lb. Pork Tasso

¾ Lb Pork or Deer Sausage

1 Lb Fresh Pork

1 Onion, chopped

1 Bell Pepper, chopped

1 Bunch Green Onions, chopped

4 – 5 Cloves Garlic,  minced

½ Cup Chopped Parsley

1 Small Can Tomato Paste

1-2    Tablespoons Roux

¼ Teaspoon Oregano

¼ Teaspoon Basil

Red Pepper to taste

2           Cups Raw Rice

1 Quart Water

Salt to taste



Cut meat into bite sized pieces and brown in small amount of olive oil.  Add bell


 pepper, onion, and garlic and sauté until clear. Add remaining ingredients except


 green onions and parsley.  Simmer in covered pot until rice is cooked.  Add green


 onions and parsley and recover and steam for 5 minutes. ( This dish is easier to


cook in oven than on top of stove.)
